I want the German pancake! And you know what goes wonderfully in the middle of the pancakes? Apples and cinnamon and sugar. Um um.

Irish Soda Bread
2 c flour
1 t baking powder
1/2 t baking soda
1/2 t salt
3 T sugar
1 T caraway seeds
3 T unsalted butter (or salted. doesn't really matter)
2/3 c dark raisins
3/4 c buttermilk
1 T melter butter
1/2 T sugar
*preheat oven to 350.
*combine flour, baking powder, baking soda, sugar, salt and caraway seeds in a bowl.
*cut in butter til it looks like course meal (can be done with hands or with a pastry cutter)
*stir in raisins; add buttermilk gradually and mix thoroughly.
*knead on lightly floured surface til smooth (about 5 min)
*shape in ball, place on greased 8" round cake pan
*cut 4" cross on top (about 2/3 through center of dough)
*brush top with melted butter, sprinkle with sugar
*bake in oven at 350 for 30 min or until cake test comes out clean
